My niece, Brandi, made these yummy low carb fried pickles coated in crushed pork rinds! 🙂
Per Brandi: I used 2 eggs with a little coconut milk (I didn’t measure it, it was just enough to cover eggs) then I crushed the pork rinds in my blender then, seasoned the pork rinds with creole seasoning… Batter the pickles and fry until browned on each side. Drain on a paper towel. Enjoy! 🙂

Leftovers make for a quick and easy lunch. Grilled burger topped with mayo, a slice of tomato, pickles, onion, and a side of pasta salad made with Dreamfields pasta.

CornDog with onion rings and sauerkraut with onion
Turkey frank 1 carb ea.
Onion 0 carb
Sauerkraut 1 gm for 2 Tablespoons
Bar-B-que Pork Rinds 0 carb
Egg 0 carb
Vegetable oil 0 carb
Whip egg with fork until smooth
Chop up about 6 pork rinds
Roll 1/2 of turkey frank in egg and roll in pork rinds.
Deep fry till done.
Roll onion slices in egg and pork rind batter and deep fry until done.
Fry sauerkraut and sprinkle raw onion on top!!!

Low Carb Fried Green Tomatoes
Green Tomatoes
Almond Flour
Egg
Salt and Pepper to taste.
Oil
Slice green tomatoes. . Place on paper towel and then flip them over to remove any excess juices. Salt and pepper both sides (salt will also help remove excess juice). Crack egg into small bowl with a little pepper and whisk. Put almond flour in another small bowl. Dip tomatoes in eggs and then dip into almond flour, coat both sides. Place in the heated frying pan of oil (I used bacon grease). Fry until golden brown.

Low Carb Chicken Dressing
Crush pork rinds to use as filling instead of cornbread. Mix together: drained boiled chicken (No broth yet),
chopped onion, bellpepper, celery, chopped boiled eggs, and spices of your choice. I use sage, parsley, oregano, garlic powder, salt and pepper. Now pour the broth from the chicken over mixture. Whip together 2 or 3 eggs then stir into mixture. Cook app 1 hour, (depends on how much you make) at 350 º.

Simple Sausage Pizza using a low carb tortilla, Low carb ketchup, cooked sausage, mozzerella, Italian seasoning, and garlic. Baked until the cheese melts and the tortilla is slightly crispy.
