Yummy Cheesy Sausage Balls ~ Low Carb and Grain Free

I’ve worked on my old sausage ball recipe and I think it’s a success!

If you love Sausage Balls, try this recipe.

You won’t even miss the baking mix!

Yummy Cheesy Sausage Balls (low carb & grain free)

3/4 lb. Odom’s Tennessee Pride breakfast sausage (or your favorite brand)
8 oz. sharp cheddar cheese, shredded
1 cup of almond flour
1/4 cup grated parmesan cheese
2 tsp baking powder
dash salt
1/4 tsp ground red pepper
1 tablespoon coconut oil, melted
1 egg

Preheat the oven to 375º F.  Spray a baking sheet with olive oil
oil cooking spray. (Misto)  Place dry ingredients in a large bowl.
Using your whisk, make sure the dry ingredients are well combined.
Add the sausage, grated cheddar, coconut oil and egg.
Mix well with your fingers, or your mixer if you prefer. The mixture
should be packy and hold the shape of a ball.

Form into 1” balls. Place the balls on the prepared baking sheet.
Bake for 16-18 minutes or until golden brown.  To prevent sticking,
move the balls with a spatula halfway through cooking or use
parchment paper to line your pan.  Remove from oven and serve warm.

Spring! My favorite time of year

(Note:  Just as I was going to press “Publish” yesterday, the electricity went off, so I’m a day late. )

My Induction Page

Induction Experience

My 2 week Induction period is over!

I lost a total of 6.5 lbs in those 14 days!

Today I woke up to another .5 lb loss, so it’s slow, but I’ll take it!  🙂

My clothes are looser and I feel pretty good right now, so I think I’ll stick to it.

I’ll try to get back to regular posting on the home page, but will try to update my induction page regularly.  Hope you stick around!

Induction ~ Days 13 and 14

Once again I’ve found myself super busy. It’s rush season in the screen printing business, so that means it’s harder to post.  It’s even harder to take a decent lunch hour! lol

Anyway, maybe I’m being too impatient.  Common sense told me I probably wouldn’t lose more than my first Induction 10 years ago, when I lost 7 lbs.

Maybe I should be happy that I’ve lost 6.5, but it is a little disappointing after all my effort.  I’d love to lose 10-15 lbs in 4 weeks.  Hopefully that will be doable.

Here’s my Sunday dinner and dessert.  Both are supposed to be Induction Friendly.  The cake is something I won’t have often.  I wasn’t overly impressed with it and think I prefer my *Baked Fudge.

Induction ~ Days 11 & 12

Sorry to lump these days together, but I was out of pocket yesterday due to my Mom-in-Love being in the hospital.


I guess we all have them…hope I’m not alone.  So often I’ve felt like a failure when it comes to losing weight, so a set-back or an off-day can seem fairly depressing.  I know I must get back on the wagon, so to speak, so I’m trying to mentally plan and prepare for another week of Induction.

This morning I had a Grilled Onion and Cheddar Omelet for breakfast.  I’ll share that recipe with you today.

Grilled Onion and Cheddar Omelet

2 large eggs

1 T diced onion

2  oz grated cheddar cheese

1 T cream

1 T butter

salt and pepper

Preheat your non stick skillet with 1 tablespoon of butter until melted.  Throw the diced onions in and sautee until tender, which is usually a few minutes.  Remove them from the skillet and set aside.

With a fork, beat the eggs, cream, salt, and pepper  in a bowl.  Pour the eggs into the skillet and cook until set.  Flip over, add the onions and cheddar cheese on to one side of the omelet and fold over.  Sprinkle a little shredded cheddar on top and place on a serving plate.  (This is the way my big brother taught me to make omelets years ago.  Some people flip over and some don’t, so cook it however you’re comfortable doing.)

Induction ~ Day 10

Down that half pound today.

It’s nothing unusual to play around with a few pounds.  Maybe my body is fighting hard to break beyond that barrier that has been so impossible to get beyond over the past few years.

I talked to my friend who started a week before me and she’s down another 1.5 for a total of 10.5 in right at 3 weeks!  She is so excited.

I up a half a pound and that’s not a surprise.

I knew this week would be tough as I’m breaking into “new” ground.

I’m looking for a better number tomorrow!  🙂

Induction ~ Day 8

Induction – Day 8

Induction Week 2 has arrived!

So far I’m down 5.5 lbs.

I am anxious to see how I will do this week. We’ll see.

Induction ~ Day 7

I’m finishing my first week and I must say I’m excited.  I’m feeling better, so that’s good.  Got my One-a-Days so I’m ready to go!

My lunch today…

I’m down . 5 lbs this morning for a total of 5.5 which is wonderful for my first week.  I’m kind of expecting a gain, just because that’s me.  This next week I’ll be losing new numbers, if you know what I mean.  It’s been a while since I lost more than 5 lbs and got lower than I am, so we’ll just see what happens.

Since it is Induction, I’m going to try to keep my meals as simple and low carb as possible.  I may try some Induction recipes next week.

I did have a Mock Danish this morning and that’s as adventurous as I’ve gotten so far.  I don’t want to fall back into the dangerous habit or trying to make fancy (or semi-fancy ;)) dishes to keep myself from getting bored.  Actually I’m not bored at all with my food, just maybe a little with water and what little flavored water I’m drinking.

Induction ~ Day 6

Feeling much better this morning…not nearly as weak as yesterday.   I was down a pound, so that felt good!  🙂

For breakfast, I had a Mock Danish.  I’ve tried this recipe once before, but this time it was much better.    I will be posting my recipe and instructions on this blog soon.

Induction ~ Day 5

Woke feeling very weak this morning. I think my sugar may be too low, so I had a small piece of longhorn cheese and about 8 oz of diet pepsi for the first time in 5 days in effort to feel a little better.

For breakfast, I cooked some bacon in the oven and my hubby fried me 2 eggs.  Now that I’ve eaten a little, I feel somewhat better, but still a little weak.

I think I’ll pick up some of  those good multi-vitamins today.

I think I need new scales, too.  My weight was all over the scales this morning, so I’m claiming that I just stayed the same.

Maybe that whoosh is coming!  🙂

My Induction Page

Induction ~ Day 4

Woke up this morning and was down another 1.5 pounds!

I feel so much better and this has actually seemed fairly easy to stick to.  I think before I was eating too many “frankenfoods” and it was probably like I was on a high carb, high fat diet.

Eating mainly meat, eggs, some cheese, and some salad greens has kept this fairly simple.  I think as long as I am prepared, as in having egg muffins ready, hamburger meat, and eggs on hand, I can do this.

I had lunch out today, so we’ll see how that affects my ketosis.  Strange thing…right after I finished eating (and I didn’t eat all of it)  I had a pain in my head above my right ear.  It might not even be related, I just wanted to make note of it.

Right now I have a headache and feel slightly drowsy.  Not sure if this is a side effect from my lunch or not.

Believe it or not, this is my lunch when I opened it, minus the tomato.  Doesn’t look very appetizing, but it was quite good.

Layered Salad

I love a good salad!

And here’s one of my favorite salads…

A dressed layered salad

Here’s what you need…

Layer the salad…

I like to use my glass trifle dish when serving this salad.

Start by layering your greens (I used leafy lettuce and baby spinach), then the sliced veggies, ending with the dressing, bacon, and cheese, and sliced green onions.

Optional:  add sliced boiled eggs, English peas, sunflower seeds


For the dressing…

1 cup of mayo
1 tablespoons apple cider vinegar
2-3 tablespoons granulated Splenda or sugar

Mix togther well and pour over the salad before topping with bacon, cheese, and sliced green onions.  Cover and chill before serving.

Low Carb Sandwich Rolls

For years I’ve used this basic Atkins’ Revolution Roll recipe, with a twist.

I use cream cheese instead of cottage cheese.

It makes a smoother roll.

Low Carb Sandwich Rolls

3 eggs, separated

1 tablespoon granular Splenda

3 oz. cream cheese, softened

1 Tablespoon coconut flour (optional)

dash salt,  (and other spices)


With a stand mixer, beat the egg whites on high until stiff.  In another bowl, blend the egg yolks, sweetener, cream cheese, coconut flour, salt and any other spices you might want to add, with a mixer until smooth.  I didn’t use any extra spices for these particular rolls.

Gently fold the yolk mixture into the beaten egg whites carefully.  Line a baking sheet with parchment paper.  Divide the mixture into 6-8 medium size mounds, flattening them slightly with the back of the spoon.

Bake at 400º  for 20 minutes or until lightly browned on top.   Cool and  store in an airtight bag in the refrigerator.  Use for sandwiches, burgers, breakfast, etc.
