I’ve been tagged! Easter Recipe Roundup

My friend Judy from The Southern Lady Cooks has tagged me in a game of Easter Tag.  I have to make a virtual Easter meal using food and recipes that I’ve already posted on my blog.

I am going to create an Easter meal with pictures for you.  Click on the photo for the recipe.  Let’s have some fun and celebrate Easter!

Note:  Since I am on the HCG diet, I will not be having this meal for Easter, only dreaming about it!  :D

Since I don’t have a Ham recipe which is normally what I’d be having for Easter, I’m going to suggest a yummy Pot Roast with Root Veggies.

Cheesy Roasted Cauliflower would go quite nicely with the roast, I think.  :)

It doesn’t seem that I’ve done a post on Skillet Fried Green Beans, but they’re a staple at our house, so I’m sure they’d be somewhere on the table.

And then my favorite, Layered Salad with that yummy tart dressing!

No holiday meal is complete without some homemade rolls.

Heavenly Yeast Rolls are just right!

Wow!  I’m getting hungry!  lol

And for dessert…

Aunt Mary’s Special Cake with Strawberries or Chocolate Sauce!

National Cheese Ball Day!

I love cheese in most shapes, forms, flavors, and dishes!

I love cheese balls!

And today, April 17th, happens to be

NATIONAL CHEESE BALL DAY!

Let’s celebrate!!!

Easy Cheesy Chili Mac…low carb comfort food!

Easy Cheesy Chili Mac

1 pound lean ground beef 

1/2  medium onion, diced

1 (14 1/2 ounce) can Italian style stewed tomatoes, undrained

1 1/2 cups shredded sharp Cheddar cheese, divided

1/2 cup  sour cream

1 1/2 teaspoons chili powder

1/4 teaspoon garlic powder

salt and pepper, to taste

8 ounces dried Dreamfields Penne Rigate (2 cups)

 

Cook ground beef and onion in large skillet.  Sprinkle with salt and pepper. Brown beef until no longer pink.  Drain fat.  Stir in tomatoes with juice, 1 cup Cheddar cheese, sour cream, chili powder and garlic powder.

Meanwhile, cook pasta according to package directions; drain.

Add chili mixture to pasta and stir until pasta is coated.  Place in a 2 qrt baking dish.  Sprinkle with remaining 1/2 cup cheese.   Bake at 350º for 30 minutes until hot and bubbly.  Serves 4

Almond Butter Waffle Bread

This recipe is based on one I found over at 24/7 Low Carb Diner.


I used Almond Butter because I had it on hand and I didn’t want to wait for it to bake since my bacon was already done and I was wanting a BLT! :D

So I cooked it in the waffle iron. It is a very substantial bread and has great texture.

Here’s my yummy BLT!  

Do not wait! Make this today if you’re needing some bread.  It is absolutely great!

Follow the 24/7 Low Carb Diner recipe and bake it in a loaf pan or cook it up like waffles if you can’t wait!

 

Cheesy Roasted Cauliflower with Bacon

 


 

Cheesy Roasted Cauliflower with Bacon

1 head of cauliflower

6 tablespoons butter, melted

1/4 cup Parmesan cheese

1/2 shredded cheddar cheese

1/4 cup real bacon pieces

1 tablespoon minced or powdered garlic

salt and pepper to taste

Rinse the cauliflower and cut into bite-sized pieces.  Place in an 8 x 8 baking dish.  In a small bowl, mix the melted butter and seasonings; pour over the cauliflower.  Sprinkle with the Parmesan cheese and real bacon pieces.

Bake at 425º about 25-30 minutes, stirring the cauliflower every 10 minutes.  Roast until it is browned on the edges and fork tender.  Sprinkle with the shredded cheddar and return to the oven for 5 minutes or until melted.

Serve as a side dish with your favorite meat.
