JOSEPH’S LAVASH BREAD

Strawberry Jam Bars

 One of my favorite recipes of all time!

The oatmeal mixture pressed in the bottom of an 8 x 8 glass dish lined with aluminum foil.  After baking, I lift the whole thing out for easier cutting.

The strawberry jam and oatmeal crumble on top of the bottom layer.

Still warm from the oven…wonderful yumminess!

Old Fashioned Chocolate Pie

A few nights ago I made this for my Mom. 

It is similar to the recipe she’s made many times over the years for Thanksgiving.  It was delicious!  I kept out some of the custard filling, that’s why the pie is not as thick as it could be.  I was kinda proud of my meringue, tho! 

 

Old Fashioned Chocolate Pie

1 (9 inch) pie crust, pre-baked

1 cup white sugar

4 tablespoons unsweetened cocoa powder

4 tablespoons flour

1 pinch salt

3 eggs, separated

2 cups milk

4 tablespoons butter

1 teaspoon vanilla extract

1/4 cup white sugar

Preheat oven to 400º F (200º C).

To Make Chocolate Custard: In a large saucepan or double boiler combine 1 cup of sugar, cocoa powder, flour, and salt.  Mix well, then stir in egg yolks and milk.  Whisk until all ingredients are thoroughly combined. Cook over medium heat, stirring constantly, until mixture has the consistency of pudding.

Stir vanilla extract and butter or into custard.   Pour mixture into baked pie shell.

To Make Meringue: In a medium glass or metal bowl whip egg whites until foamy.  Gradually add 1/4 cup sugar, continuing to beat until whites form stiff peaks (I used the Kitchenaid for this).   Spread meringue over chocolate custard, covering completely.

.Bake in preheated oven for 5 to 6 minutes, until meringue is golden brown.   Cool before serving.

We try to go by these menu plans, but sometimes the best laid plans fall through.  Here’s my tentative plans…

Breakfast for me is usually a Low Carb Burrito (with eggs, chilies, cheese) & coffee

Kids – eggs or cereal

Dinner Plans:

MondayBBQ Chicken Legs, Green Beans, Coleslaw, Mac & Cheese
Tuesday – Reubens (mine on lavash bread)

Wednesday – Sloppy Joes, chips, fruit

Thursday – Chicken and Pasta, green beans

Sugar Free Butterscotch Cheesecake

 

Low Carb Sugar Free Butterscotch Cheesecake
 
Crust:
1 1/2  cups total of very finely chopped pecans, almonds, & sugar free coconut
3 packets Splenda
2 T butter, melted
1 tsp. cinnamon
Place the finely ground nut mixture, 3 pks of Splenda, the butter and cinnamon in a food processor and combine thoroughly. Press the crust mixture in an 8 x 8 glass dish. Bake for 10 minutes and then cool.
 
The Cheesecake Filling:
1 small package sugar free butterscotch pudding (or your favorite flavor)
1 cup heavy whipping cream
1 cup water
1 each 8 oz cream cheese
 
Mix all ingredients together until no lumps are left.  Pour over the baked crust.  Chill until set.  Servings: 9

Smoked Turkey Salad

This is surprisingly yummy!

I say surprisingly because I wasn’t sure how it would turn out.   After my hubby smoked the turkey breast,  it was a little on the dry side and not very tasty.

After sitting in the fridge overnight, it was better, but still dry.  I didn’t want to waste it so I got to searching for turkey salad recipes.

.

First of all, I pulled out my Joy of Cooking.  Sure enough, there was a Turkey Salad recipe in there and I had all the ingredients except curry powder.   I wasn’t sure I wanted curried turkey salad anyway, so being the Queen of Substitutions, I proceeded to make my own version.

I sliced, then chopped the smoked turkey breast into small chunks.

I ran the turkey breast and onions through the food processor, then dumped it into a mixing bowl.

I then added mayo, honey mustard, raisins, chopped pecans, celery seed, salt and pepper.  I even threw in a dash of nutmeg.

.

If only I had some leafy green lettuce to put it on!  I didn’t, so I proceeded to put it on some honey wheat bread and had some plain Lays potato chips to go with it.  Yum!

My daughter ate it with Ritz crackers and loved it!

Smoked Turkey Salad
 
2 cups chopped smoked turkey breast
2 tablespoons diced onion
3/4 cup mayo
2 tablespoons honey mustard
1/2 cup chopped pecans
1/2 cup raisins
1/2 teaspoon celery seed (or chopped celery if you have it)
dash of salt, pepper, nutmeg to taste
 
Mix all together in a medium size bowl.  Serve on lettuce with crackers or on a toasted bun or bread.

Note:  This was better the next day, so maybe chilling in the fridge first to let the flavors blend makes a difference.
 
* To reduce carbs, use regular or spicy mustard, remove the raisins, and if you like it a little sweeter add a small package of Splenda or sweetener of your choice.

 

 

Southern Lady’s Peach Cake

My friend over at Southern Lady Cooks enticed me with her Peach Cake recipe.  Since I had all the ingredients (there’s not many), I whipped it up Sunday afternoon.

My mom, who’s been rehabbing  from her hip surgery, got to enjoy a piece when I stopped by to check on her.  I guess I get my love of homemade desserts from her.  We collect cookbooks as a hobby and read them like novels!

Now on to the Southern Lady’s recipe…

Peach Cake

1 large can sliced peaches, drained and mashed (I used 2 regular cans since that is all I had at the time) You could also use fresh peaches.
2 cups all-purpose flour
2 cups sugar
2 teaspoons baking soda
 
Drain the peaches and empty into a large bowl.  I just used my hands to mash them.  Add flour, sugar and soda and mix well.  Spray a 9 x 13 inch cake pan and pour in batter.  Bake in a preheated 350 degree oven for 35 minutes.   See recipe below for icing.
 
Icing:
3/4 cup sugar
3/4 regular sized can of evaporated milk
1 stick butter or margarine
1 cup coconut  (I used a little more than a cup of coconut)
1 cup nuts (Doris uses pecans I used walnuts)
Boil everything but the nuts on top of the stove until thickens, remove from heat, stir in nuts and spread on cooled cake.  Enjoy!

Handyman’s Jambalaya

My hubby has these boring hunting videos…

well, boring to me anyway.  That’s where he got the inspiration and recipe for this Jambalaya.

That he is holding a spoon in his hand and putting this dish together all by himself is totally amazing!

When it comes to grilling, he’s a pro…but to actually cook something in a pot that has lots of ingredients?!  I’m impressed.  :)

What’s that famous saying…”Make Jambalaya.  They will come.”  Just kidding.  I made that up.

Nevertheless, it’s true!  This is some good stuff.

Handyman’s Jambalaya 

(Sorry, he doesn’t do a lot of measuring, but these are the basic steps he follows.)

 
6 chicken thighs, boneless and skinless
1 lb polish or cajun spiced smoked sausage
1 large bell pepper, chopped
1 large onion, diced
2 tablespoons tomato paste

oil for cooking meat, maybe 1 tablespoon
 
spices, 1-2 dashes of each:
salt, pepper, oregano, garlic, cajun spice, chili powder,
 
3 cups chicken stock or boullion
3 cups instant rice (long grain will work, adjust the liquid)
 
In a large dutch oven add the oil and over med- high heat, cook the chicken and sausage until done.  You might need to check the chicken to be sure after about 20 minutes. 

Add the chopped pepper, onion, and spices.  Continue cooking until the veggies appear to be tender, maybe another 10-15 minutes, watch carefully and stir often to avoid sticking. 
 
Pour in the chicken broth and add the rice.  Cook until the rice is tender.  Let set for about 10 minutes before serving.
